Introduction to Hobby Distillation and Moonshine Making
Distillation is the process of separating the alcohol from fermented liquids such as fruit juices, wine, or beer to produce a higher proof alcohol. Moonshine is a popular term used to describe illegally produced distilled spirits, but in the context of hobby distillation, it can refer to any type of distilled spirits made for personal consumption.
Before embarking on your first batch of moonshine, it's important to note that in many countries, including the United States, it is illegal to distill alcohol without obtaining proper licenses and permits. Therefore, it is recommended to check your local laws and regulations before proceeding.
Step 1: Gather Equipment
The following equipment is necessary for hobby distillation:
Fermentation vessel (food-grade plastic or stainless steel container with a lid)
- Air lock
Thermometer
Heat source (e.g. propane burner)
Copper tubing (for cooling the distilled spirit)
Collection vessel (for collecting the distilled spirit)
Step 2: Prepare the Mash
The first step in making moonshine is to prepare the mash, which is the mixture of sugar, water, and yeast that will be fermented to produce alcohol. The sugar can be from any source, such as corn sugar, molasses, or honey.
To make the mash, combine the sugar and water in the fermentation vessel and stir until the sugar is dissolved. Add yeast and cover the vessel with the lid. Insert the airlock to allow carbon dioxide to escape while preventing oxygen from entering.
Step 3: Fermentation
Allow the mash to ferment for several days, until the specific gravity of the liquid has decreased to a level that indicates the yeast has consumed most of the sugar. This can be determined using the hydrometer. The temperature during fermentation should be kept between 68-72°F.
Step 4: Distillation
Once the fermentation is complete, it's time to distill the alcohol. Fill the moonshine still with the fermented liquid and heat it with the propane burner. As the liquid begins to boil, the alcohol will vaporize and travel up the distillation column.
Step 5: Collection
As the alcohol vapor reaches the top of the moonshine still’s cap or column, it will condense back into a liquid form and be collected in the collection vessel. Use the thermometer to monitor the temperature of the distilled spirit and stop collecting it when it reaches a certain proof, which can vary depending on personal preference.Step 6: Aging and Dilution
The distilled spirit can be consumed immediately, but many people prefer to age it for a few weeks or months to allow the flavors to develop. If desired, the distilled spirit can also be diluted with water to reduce the proof.
